JUSTIN is making a distinct effort to “JUST Go Green” by implementing sustainable practices wherever practical. Our most recent effort is the recycling of our barrels. Evan Baldwin, son of Proprietors Deborah & Justin Baldwin is spearheading our “JUST Chips” program to recycle our used oak barrels. Evan feels strongly "that we all need to do our part in respecting the environment and this is JUST one way of demonstrating that we take this seriously." We make our 100% recycled French oak wine barrel grilling chips from barrels used to age our prestigious ISOSCELES wine. These barrels are made from one or more of the forests that were planted in the days of Napoleon for shipbuilding. The oak trees can be over 300 years old.

We select barrels made from 5 different French forests located in the center of France. Each forest produces wood with distinctive characteristics. Once the trees are felled they are air dried for an incredible 3 years before being made into barrels! After 2-3 years of use the barrel staves are so richly impregnated with wine aromatics that they are no longer useful for aging. It is then that we hand select only the most heavily infused and flavored barrels to split into our famous grilling chips.

In addition to enhancing a great meal, JUST Chips are an environmentally friendly way of dealing with a by-product of the winery and is consistent with the sustainable farming practices we utilize in our vineyards.
